Tunis Street Food Tour

A two to three hour walking tour tasting typical dishes like Keftaji, Leblebi, Droo, fricassé, and different pâtisseries, and discovering the daily rhythms and geographies of life in the meanders of the Medina (Old City) and the Colonial “Ville nouvelle”.

Start time & location: 9 am on the steps of the Zitouna Mosque, old city (Medina) of Tunis, or at mutually agreed location.

End time & location: approximately 11:30am, Bab el Bhar (entrance to old city of Tunis), or at mutually agreed location.

What to expect:  Fast, cheap, but also surprisingly nutritious and healthy, many of the most emblematic Tunisian street foods reflect the multi-faceted cultural influences that have shaped the country through time, borrowing their names from Turkish, Italian or French. For example, Leblebi, the Turkish word for chickpeas, is a chickpea broth served over day-old bread, topped with tuna and a poached egg. Tunisian Fricassé (a sort of ragoût in France), is a savoury fried pastry stuffed with ingredients like egg, olives, harissa, capers and mashed potato. The tour includes a large number of tastings of savoury and sweet dishes – you can plan on skipping lunch afterwards!

Central Market Tour, immersive cooking experience, and lunch

This half-day experience begins with a visit to the Fondouk El Ghala, or “Hotel of Fruit” in literal translation, Tunis’s Central Market. Guided by a chef who has bought fresh produce for his family restaurant at the market daily for over twenty years, the group then return to the chef’s family-run restaurant for an immersive experience in their working kitchen, taking part in prep alongside the staff. You will then enjoy the daily specials to which you have contributed to preparing.

Start time & location: 9am central market.

End time & location: approximately 1:30pm at restaurant in old city.

What to expect:  The market itself is a colonial construction (dating from 1891) that blends Art Deco and “Moorish” styles, that houses one of the largest and surely most atmospheric fish markets of the entire Mediterranean. The tour is filled with tastings at different stalls, anecdotes, and insider tips on how to choose the freshest produce. Alcoholic beverages not available for sale or consumption over lunch.

Tabouna/Malawi & Harissa Workshop, followed by Lunch at Lamia’s Farm

A half day of culinary workshops at Lamia’s rural home in the Cap Bon, during which, depending on the weather, you will make either Mlawi, a flaky pan-cooked flatbread, or Tabouna, a leavened bread cooked in a clay oven. You will then make Harissa, a spicy purée of red chillies that is served with almost every meal in Tunisia, and recognized as a facet of the country’s “intangible cultural heritage” by UNESCO. The workshops are followed by a home-cooked lunch or dinner of fresh, local ingredients, served in your host’s home.

Start time: 9am or 4pm at the farm, located approx 1 hr drive south east of Tunis

End time: between 2pm and 3pm if beginning in  the morning, or between 8pm and 9pm if beginning  in the afternoon

What to expect: be prepared to wander around the farm (bring comfortable shoes) and to be hands on for the bread and harissa preparations. Alcoholic beverages are not for sale but guests may bring their own. Local food products of our partners, organic cosmetics and Sawa Taste of Tunisia kitchen branded items are available for purchase.

Market Tour and Fish Lunch, Nabeul

Led by Lamia Temimi, this market tour will take you through the different sections of the Central Market of Nabeul. In the course of the visit you will buy fresh fish from a vendor, which is then prepared on the spot in a small restaurant stall in the corner of the market.

Start time: 10 am at the market, located approx 1 hr drive south east of Tunis in the heart of Nabeul.

End time: 12 noon

What to expect: be prepared to take in the sights and smells as you wander through an atmospheric market with sections devoted to fish, fresh fruit and produce, spices, and other local products. This is a local market, so be prepared for it to be lively and at times crowded. You will have the opportunity to purchase dried items like herbs and spices to take home, or fresh products also if you wish (cash only). The lunch is cooked and eaten in an open air stall at the corner of the market with seating in an alley with pedestrian traffic. Alcoholic beverages not available for sale or consumption over lunch.
